Tasting Notes: Four New Fun Farm Animal Labels Sheep, Pig, Cow & Horse - Collect them all! Serve well chilled, pouring immediately.
Nose: Intensely aromatic, this Pet Nat explodes on the nose with lime, fresh ginger, guava, mango, and orange peel leading while cumin seed, cinnamon, and rose petals echo throughout.
Palate: The palate brings more fruit with lychee, starfruit, and pineapple mingling with cardamom and alstroemeria.
Finish: Soft, creamy bubbles and a rich mouthfeel provided by the lees in-bottle are balanced by excellent acidity and freshness.
Pairing: Pair this wine with shucked oysters or fried chicken for a thoroughly enjoyable evening.
Winemaking Notes: Harvested on October 5th, 2021, the grapes were gently pressed into stainless steel tank and allowed to settle for several days prior to being racked off heavy lees. Fermentation started shortly before the wine was racked off its gross lees. The 2021 Pétillant Naturel was bottled while fermenting to capture carbon dioxide in bottle.
