Verto is a new kind of beverage that turns wine country on its head, bringing all the flavour and sense of place of wine with naturally non-alcoholic ingredients. Brought to you by Winemaker Ilya Senchuk and Sommelier Nadia Senchuk of Leaning Post Wines, this amazing blend of verjus (early picked wine grape juice) and tea, infused with fruit and botanicals is lightly fizzy, refreshing and totally unique!
Tasting Notes: On the nose, very perfumy and fruity with equal parts green apple, lemon rind, peach, elderflower, juniper and cinnamon leaping out of the light mousse of bubbles. On the palate, more lemon, lime and nectarine, more spice and a great mid-palate weight and stoney, minerally and salty finish. The texture, length, and dryness are exceptional, creating the most wine-like beverage you will taste in the non-alcoholic world.
Beverage-making Notes: Our goal was to recreate the experience of a Niagara Sparkling Riesling, using local, craft, non-alcoholic ingredients. We picked Riesling from Niagara very early and pressed it to make our Verjus (literally translated as “Green Juice”). We then made a small batch infusion with green tea, fruits and botanicals. These were mixed together, and bottled with a light, sparkly fizz.
