Release: 2023 White Meritage Wine: 67% Sémillon & 33% Sauvignon Blanc Winemaking Notes: This wine is a tribute to an exceptional Ontario vintage and the dedication to working overtime to achieve winemaking excellence. Sourced from the estate’s Neufeld Vineyard, this blend of 67% Sémillon and 33% Sauvignon Blanc was aged for 16 months in neutral French oak, building texture and harmony without heavy oak influence. Elegant and restrained on the nose, it reveals layers of quince, yellow apple, chamomile, and honeysuckle, with subtle hints of beeswax, almond cream, and dried citrus peel. The palate is medium-bodied and dry, carrying flavours of lemon curd, pear skin, and delicate tropical fruit, wrapped in a creamy, mineral-driven texture. A savoury finish with saline minerality lingers long after the last sip. Complex, refined, and textural, this White Meritage is a wine that rewards both thoughtful food pairings and quiet contemplation.
