The best white wine that Rob has ever tasted was a blend of Semillon and Sauvignon Blanc from the Graves region in southern Bordeaux. These two grapes make absolutely splendid partners: Sem is the soft, rounded, calming Yin to Sauv’s bright, nervy and pungent Yang. We’ve always been known for our Sauv Blancs, but never had a good source of Semillon to play with. So, when our grower John Fedorkow at Fruithaven Farms asked what we wanted to plant, the answer was clear and emphatic: SEMILLON!
Tasting Notes: Brace yourself for piercing tropical perfume with pineapple, citrus, fresh fennel and a beeswax note from the Semillon. The palate shows that wax too, manifesting as a plush texture that carries ﬂavours long and deep on the shoulders of grapefruit acid tension. Has the structure to age gracefully 5-10 years. More Sauvignon Blanc than last year’s model lending more ﬂavours to dance on that comfy cushy palate.
Food Pairings: Maybe nothing else at all? This wine would make a great aperitif on its own. Or you can pair with foods that echo the blend’s texture and delicacy. Creekside’s in-house sommelier Britnie, when asked for the best food match, answered without a second’s hesitation: “Lake Erie whitefish en papillotte with lemon and garden herbs”. But if you are just too tired for culinary perfection, order out!
