TASTING NOTES

Floral, tropical, fresh. Three adjectives that can be used to identify this vintage of Gewürztraminer. Primary aromatics are rooted in rose petal, guava, kiwi, candied ginger and underripe stone fruit (primarily yellow nectarine). A subtle note of honeydew, beeswax and Asian pear become evident the longer the wine is allowed to micro-oxidize in the glass. The palate mirrors the nose, with more focus on green apple, quince and yellow apple. The acid is bright, and allows focus on the palate, and the finish is of medium length.

The fruit was harvested from our satellite farm on East/West Line on September 19th, 2022 at 21.2 brix. The fruit was immediately pressed under hermetic conditions and cold settled. Subsequently, primary fermentation took place over 4 weeks at cool temperatures. Post fermentation, the wine was racked off gross and fine lees twice, before being fined (using bentonite), filtered and remaining in tank till bottling on June 23rd, 2023.

FOOD PAIRINGS AND SERVING TEMPERATURE

When pairing this elegant wine, look to foods that have high acid and salt, increasing the presence of fruit aromatically, and balancing the acid on palate. Options like fried green tomatoes with a classic remoulade or spicy mayo will balance the fragrance of this wine, while bringing more sweetness and fruitiness to the entire sensory experience. Alternatively, crispy fried calamari, with lemon juice as a garnish and fresh marinara is a match made in heaven. Foodies may want to explore umami dishes to increase perceived body in this wine – ginger miso-glazed eggplant will balance the wine, but still ensure no flavours are lost.
