Tasting Notes
A clear, pale lemon hue sets the stage for an expressive and aromatic experience. On the nose, this wine bursts with exotic intensity—ripe notes of candied ginger, rosewater, and tropical passionfruit mingle in an enticing bouquet. The palate is lush and silky, revealing vibrant flavours of juicy mango, bright orange zest, and a delicate hint of white tea. Slightly off dry, with a refreshing lift and lively acidity, this Gewürztraminer is both opulent and precise, delivering a beautifully balanced and memorable finish.
Winemaking Approach
Hand Harvested, bunches were destemmed and slightly crushed allowing for a quick skin-contact cold soak. After an hour cold soak, juice was gently pressed to stainless steel tanks for cold settling. After 24 hours, clean juice is racked off, sedimentation and fermentation begin. Inoculated with selected yeast strains and fermented cool at temperatures between 16c-18c, contributing to a slow 21-day fermentation. Fermentation was stopped with temperature of 0 Celsius, preventing yeast from converting more sugar, retaining natural sweetness, and providing our desired balance.
