Tasting Notes: This Pinot Gris presents a beautiful straw-yellow colour, shimmering with clarity and brightness. The nose is expressive and aromatic, offering a complex bouquet of mandarin orange, ripe apple, and golden honey, interwoven with delicate floral notes of honeysuckle and orange blossom. These aromas are layered and pronounced, drawing you in with both freshness and a touch of opulence.
On the palate, the wine is soft and elegant, with a gentle, rounded texture that makes it immediately approachable. Flavours of candied apple and orange peel come to the fore, enriched by a subtle thread of honeyed sweetness that adds depth without overwhelming the wine’s natural vibrancy. A slight citrus lift on the finish brings balance and keeps the profile crisp and refreshing.
Refined and nuanced, this Pinot Gris is both charming and sophisticated, ideal for sipping on its own or pairing with lightly spiced dishes, seafood, or soft cheeses.
Winemaking Approach: Working with premium fruit growers in Washington State, this high-quality Pinot gris was harvest, crushed -destemmed, cold settled and delivered within 48 hours of picking to 50th Parallel for fermentation to commence.
Barrel Fermentation – Settled for 48 hours before racking clean juice to neutral barrels (20% of total volume). Fermented for 10-12 days, followed by one month aging on lees in barrel. Contact with lees creates round mouthfeel and complex aromatics.
Stainless Steel Fermentation - Fermented in 4 vessels, ranging from 5000L – 10000L in capacity. Inoculated with selected yeast strains after a cold settle to clarify juice. Fermentation was temperature controlled, from 16c – 18c, to bring a complexity of aromatics, leaning towards stone fruits and tropical fruits.
