Winemaker's Notes: Tropical-citrus scents, unleash pink grapefruit, pineapple and lime, accented by frosted ginger, honeycomb and rosewater. Entry is soft, luscious and dry, with persisting citrus and tropical fruit flavours including tangerine, lime and lychee, giving way to apricot, sliced apple and honey.
Dry: 0.5 g/L residual sugar
Vegan friendly. Sustainable Winegrowing Ontario Certified.
Pairing & Serving: Chilled to 9 to 12°, beside foods with a touch of sweetness and heat. Sichuanese dishes and traditional German fare like pork chops or sausages with sauerkraut are ideal partners.
Vinification Notes: After the grapes were destemmed, the juice and skins were held for a 48-hour cold-soak. The must was pressed for fermentation and settling in stainless steel, producing 299 cases for bottling in February 2025.
At the time of bottling alcohol measured 13%, residual sugar 0.5 g, titratable acidity 4.9 grams per litre and pH 3.6 .
