FLAVOUR PROFILE: This Chardonnay is clear and bright with a bouquet of golden / yellow apple, Bartlett pear, a touch of lemon, and subtle spice and oak. This slightly rich, medium-bodied wine has lovely texture, yet still shows an elegant side. Flavours of ripe tree fruit and spice caress the palate, then a splash of acidity refreshes and enlivens the mouth. Notes of apple, pear, pineapple, lemon, and spice, with just a touch of oak, linger on the finish.
FOOD PAIRINGS: A lovely sipping wine for when the best of friends gather. Enjoy with mushroom and onion quiche; smoked salmon quiche; Tilapia baked with leeks and mushrooms; lightly breaded pan-fried fresh-water fish with buttered new potatoes; crab stuffed mushroom caps; lightly spiced crab cakes; poached salmon; pan-fried scallops; chicken in a cream sauce; crown roast of pork; black bean dip with unsalted tortilla chips; salmon and cream cheese pinwheels; roasted garlic hummus and pita chips. Enjoy now through 2026.
WINEMAKING: The grapes come from select vineyards in Kelowna and Osoyoos regions of the Okanagan Valley, and from the Similkameen Valley, allowing for unique Chardonnay characteristics from each terroir. 50% of the wine was fermented and aged in new French oak barrels for 3 months, with battonage (lees stirring), and underwent a full malolactic fermentation to soften the acidity. 50% of the wine was aged in stainless steel with no malolactic fermentation for a more refreshing fruit forward style. This first vintage of the Odyssey Chardonnay was blended, allowed to rest, then bottled in small production of 524 cases.
