Release: 2021 Overtime Cabernet Sauvignon Wine: 100% Cabernet Sauvignon Winemaking Notes: The 2021 Niagara vintage presented challenges for later-ripening varieties, with cooler temperatures and increased rainfall requiring careful vineyard management to achieve optimal ripeness. Through focused canopy management, including leaf removal and multiple passes of green harvesting, the remaining fruit was carefully concentrated to capture the varietal character of this estate grown Cabernet Sauvignon. The grapes underwent an extended cold soak followed by gentle maceration to extract depth and complexity while preserving elegance and avoiding harsh tannins. With the natural acidity and structure of the vintage in mind, the wine was aged for four years in seasoned French oak barrels, allowing the fruit, oak and tannins to gradually integrate into a harmonious expression. Deep ruby in colour, this Cabernet Sauvignon reveals aromas of black currant, dark cherry, and wild blackberry, complemented by notes of cedar, graphite, and dark chocolate. The palate is elegant and savoury, with layers of dark fruit, refined acidity and firm yet polished tannins. A structured, graceful finish carries lingering notes of spice and earth. Enjoy now for its vibrant freshness or cellar for up to eight years as it continues to soften and develop further complexity.
