Release: Overtime Traditional Method Sparkling Brut Nature Wine: 100% Chardonnay Winemaking Notes: Two exceptional Niagara vintages come together in this Traditional Method Blanc de Blanc, each bringing its own character to the final blend. The warm and balanced 2010 growing season delivered ripe, expressive fruit, while the cooler 2011 vintage contributed bright acidity and a refined mineral edge. Hand harvested Chardonnay clusters were gently pressed and transformed into cuvée before undergoing a classic prise de mousse fermentation. After spending ten years resting on lees, this wine developed remarkable depth, elegance and complexity before being disgorged in 2021. An additional five years of bottle ageing has allowed every element to come into harmony, resulting in a sparkling wine that is both polished and deeply expressive. Rich and layered on the nose, aromas of marzipan and freshly baked bread intertwine with subtle citrus and crisp green apple. The palate is creamy and refined, lifted by a lively mousse and ripe fruit character. With no dosage added, the finish remains naturally dry, crisp, and beautifully focused, allowing the nuances of both vintages to shine through.
