A classic style of Riesling, this wine showcases primary aromatics of candied green apple, Asian pear, honey and subtle pineapple. This wine was fermented cool and reductively, using selective yeast that creates an ester and terpene driven aromatic profile. The palate is a repeat of the aroma, with notable lemon zest and underripe citrus fruits. Racy, but balanced malic acid rounds of the tasting component, making this a fresh and lively interpretation of Niagara Riesling. This is a wine that can age for decades without losing character, instead over the years it will develop a deep golden hue and a shift in the flavours profile more towards of honey and petroleum. FOOD PAIRINGS AND SERVING TEMPERATURE While its young, this wine is best served at 6 °C. Thanks to the crisp acidity, medium alcohol, intense aromatic profile and minute hint of residual sugar this wine is excellent paired with any kind of Asian spicy food and roasted vegetables with natural sweetness components like coconut, caramelized onions, carrots.
