Description from the Producer
Hand harvested from a vineyard, located on the shores of Lake Ontario in Hillier/Wellington, Ontario. Destemmed and fermented on skins for 14 days with punchdowns twice daily. This wine was pressed, settled and put to neutral barriques to age for 8 months. Racked out of barrel and bottled unfined and unfiltered with a minimal amount of sulphur. A broad nose with typical aromatics of orange peel, rose petal and honey. The palate carries with it the intense aromatics with a medium amount of tannin. As is characteristic of PEC vineyards, the minerality and acidity carry this wine through to a long finish. Cases Produced: 47 Grower: Tim K.
