Winemaking Notes: Rich, elegant, and full of character, the NV Wild & Free ‘Savage’ Brut is a Traditional Method Blanc de Blancs crafted from 100% Chardonnay. Harvested in 2010 and 2011, the wine spent more than ten years resting in the cool quiet of our cellar, developing remarkable depth and complexity. Aromas of toasted brioche and marzipan mingle with subtle citrus, creating a layered and expressive bouquet.
On the palate, extended lees ageing brings a smooth, creamy texture complemented by delicate bubbles and a bright, refined finish. A touch of Riesling Icewine rounds out the structure, while the dry profile keeps the wine lifted and balanced.
