Just One Rose combines juicy ripe Niagara Gamay with aromatic estate grown Pinot Noir (and a dash of estate Gamay).

Winemaker Dan Sullivan introduces a new line of small lot, minimalist, artisanal wines with a distinctive craft paper label. Just One Rose got its name as Dan aimed to capture the beauty and appeal of a single rose in a bottle of rosé.

The Gamay was fermented cold on the skins for 72 hours before being pressed cold and fermented to dryness. The Pinot Noir was a saignée, or running off of Pinot Noir juice after pre-fermentation cold soaking from selected lots of fruit from our West Block planting.

This is a dry rosé comprised of Gamay Noir (80%) and Pinot Noir (20%)
