Description from the Producer
Composition: 100% Pinot Noir
Fruit and candy waft from the glass; maraschino cherry, red licorice and jujube, with cantaloupe, nectarine and floral fragrance. Soft and fresh on the palate, its citrus, melon and red candy flavours are energized by tingly acidity.
Estate-grown grapes were hand-picked at cool daybreak temperatures, October 2nd, as grape sugars averaged 20.4° Brix.Estate-grown Pinot Noir clusters were hand-picked and pressed immediately for optimum freshness, after which the juice chilled in a horizontal “dairy tank” prior to cool fermentation in stainless steel. This vintage was bottled in February 2024.
At the time of bottling, alcohol measured 12%; residual sugar: 0 grams per litre; 6.7 titratable acidity: grams per litre pH: 3.3
