Ce cépage possède une caractéristique particulièrement remarquable : sa résistance au gel. L'Ehrenfelser a été créé en 1929 par croisement de Riesling et de Knipperlé (un cépage blanc alsacien). Son nom vient des ruines d'Ehrenfels, près de Rüdesheim, en Allemagne.
