Viognier

Is Canadian Viognier sweet or dry?

Almost all Canadian Viognier is made dry, even if the ripe peach and apricot flavours try to convince you otherwise. That is the kind of quiet confidence Canadian winemakers do not get enough credit for. Low acidity is what makes it feel soft in the mouth.

How is Viognier different from Chardonnay?

Both can be full bodied, but Viognier leans floral and perfumed where Chardonnay leans buttery, especially when oaked. Canadian Chardonnay usually gets more oak time than Viognier does here. The aromatics are the easiest way to tell them apart in the glass.

What food goes well with Viognier?

Roast chicken, pork and creamy pasta suit its weight and soft acidity. It handles mild Thai or Indian spice better than most whites, a pairing note no LCBO shelf talker offers. Chill it first, then let it warm slightly, and try it with salmon or scallops too.
