Description from the Producer
Tasting Notes:
The nose abounds with fruit: cherry, plum and blueberry, decorated by black tea, cinnamon sugar and lavender. Bright and silky-smooth in the mouth, it tastes of black cherry, strawberry and spiced baked apple, with mid-palate vanilla and gentle spice persisting through the finish.
Enjoy now to 2032.
Food Companions: Best served near 14° C with Coq au vin, braised duck with porcini and semolina or a charcuterie plate of mild cheeses, figs and páté.
Vinification Notes:
Made from grapes hand-picked in the third week of September, 70% from the Moira Vineyard at 20.9° Brix and 30% from the Mottiar Vineyard at 22.2° Brix.
The grapes were destemmed and vinified separately by site. Post-fermentation, the wine was pressed and racked to French oak barrels to age for nine months. After blending, 384 cases were bottled in July 2023.
At the time of bottling, the wine was measured at 12% alcohol, 0 grams per litre residual sugar, 6.2 grams per litre titratable acidity and 3.57 pH.
