Introduce yourself to the unique taste of our Fume Blanc wine, crafted from 100% Sauvignon Blanc grapes. This wine is bottled young and directly off the lees, vegan and unfiltered, it's a perfect choice for those who love full-bodied white wines.
Tasting Notes: Grapefruit and lime, hay, a subtle hint of vanilla and butter. A robust, warm finish with a touch of tannin. Very soft and very delicious.
Food Pairing Suggestions: The acidity and minerality of this Fume Blanc make it an excellent pairing for dishes with bright and zesty flavours, such as seafood with lemon or butter sauce, or creamy pasta dishes with herbs. The wine's subtle vanilla and butter notes also complement rich and creamy dishes such as risottos and soft cheeses. Additionally, the wine's acidity and minerality can cut through the spiciness of dishes like Thai curries or Mexican mole sauce.
Residual Sugar: 3 g/L
Winemaker's Note: Bottled in April 2022, we have kept this wine in the cellar aging for several months aging and awaiting release. Bottled directly off of the lees, shortly after malolactic fermentation was completed.
Slightly reductive on the nose, with notes of bell pepper, honey and vanilla, the pallet is creamy with a lovely acidic backbone that carries the finish.
Aged in used french oak barrels for five months, and bottled unfiltered.
