Description from the Producer
A rich bouquet of florals all blends together, with lavender, lilac, and chamomile coming out on the nose. The taste is a light golden apple with sumac coming through between different flowers on each taste.
Winemaker's Note: This wine was a lot of work and a lot of fun to make. The inspiration behind this wine comes from the winemaker's childhood memories of his mother's herb garden and her love for books about flowers, herbs, and vegetables. He started experimenting with tisanes and found it fascinating how the various herbs impacted the flavours of the wines. He was inspired by Vermouth, a traditionally fortified wine infused with herbs, spices, and flowers. He enlisted local growers and began to forage from his farm, collecting everything fresh and infusing the wine with them. This wine is perfect for an aperitif, served with cheese plates, or in cocktails like County Royale, Summer Breeze, The Most Refreshing Cocktail You'll Drink All Summer, Traynor's Vermouth (Moscow) Mule & Vermouth Spritz.
Production Note: Made from a blend of wines, every year we retain approximately 1/3 of inventory and blend into the new production, similar to a modified solera method to help build character and consistency.
