Description from the Producer
Winemaker's Notes
Composition: 80% Cabernet Franc, 14% Gamay and 6% Pinot Noir. Pressed from grapes grown specifically for this wine, picked as grape sugars averaged 21.3° Brix.Freshly sliced strawberry abounds on the nose, beside kiwi plus lime, grapefruit, and a tangy notion of sweet red pepper. Crisply luscious in the mouth, it tastes of red berries, cantaloupe and watermelon, leading to a zesty finish.
Grape berries were destemmed, crushed, and sent to tank for a half-day cold soak before pressing. Cold-fermentation and stabilization were completed in stainless steel before bottling.
Dry: 0.5 g/L residual sugar
According to the LCBO Sweetness Code: No sweetness perceived; well rounded with balanced acitity.
At the time of bottling, alcohol measured at 12%, residual sugar 0.5 grams per litre, titratable acidity 7.4 grams per litre and pH 3.45.
