Description from the Producer
Fermented on pressed Grimsby Hillside Riesling skins with punchdowns twice daily for one week with an addition of fermented verjus from our estate vineyard. Lemon Balm and Lavender were harvested from the Trail Estate gardens and infused into the finished piquette. Bottled unfined and unfiltered with an aimed pressure of 1.5 bar. Fresh and vibrant with aromatics of waxy citrus and lavender. Intensely floral with a slight note of pepper. Effervescent on the palate with a hint of astringency and a citrus finish.
