RECIPE - Homemade Wine Ice Cream for Mother's Day!

Today, we have UK photographer and foodie Veronica Shah sharing a special ice cream recipe that you can make yourself – oh, and it’s made from wine. This is a recipe that is sure to impress any wine-loving Mom!

This ice cream is simple to prepare and can be made in the comfort of your own home, without using an ice cream maker. It’s the perfect treat for celebrating Mother’s Day! All you need is a good wine (today we're sampling some gems from Sperling Vineyard - offering you free shipping all week long), some basic ingredients that you can find at your local grocery store, and a few common kitchen utensils. 


Ingredients you will need

A wide variety of wines can be used for this recipe. Ideally, you should opt for a wine that has a sweet and fruity flavour like the Sperling Vineyards 2014 Sper…itz or 2015 Market White. If you want the ice cream to have a nice pink colour, go for a red - an excellent option is Sperling Vineyards 2015 Market Red. Whichever one you choose, you will need a 1 cup serving of wine (which leaves quite a bit for you to enjoy while the ice cream freezes!).

Since we're preparing ice cream, you will want to chill the wine so that everything remains nice and cool. You can either chill the wine bottle in a fridge or ice bucket for a little while, or stick it in the freezer for 15 minutes.

Along with the wine, you will also need 2 cups of heavy whipping cream (35%), 2 tablespoons of corn starch, 2 tablespoons of dry milk powder, 1 cup of sugar, 1 teaspoon of salt, 1.5 cups of pureed mixed berries (use strawberries and raspberries to ensure a deep pink colour) and 5 drops of vanilla extract.


Preparation instructions

Pour the cream into a bowl and use a hand mixer to thoroughly whip it. This should take 1 – 2 minutes to do; you can stop when it is thick and fluffy.

In another bowl, combine all of the ingredients except for the berries and use a whisk or spoon to stir everything together. This should also take 1 – 2 minutes, after which the solid ingredients should be almost completely dissolved into the wine.

Add this wine mixture and the berries to the whipped cream. Once again, use the hand mixer to combine everything well.

Then all you need to do is pour this mixture into a container and allow it to sit in your freezer overnight. The following day, your ice cream will be ready!
