The story behind Smoke and Gamble
Smoke and Gamble is the serious side of a Norfolk County estate on the north shore of Lake Erie. The same family also makes the cheeky, good-value Frisky Beaver wines, so the two labels play good cop and bad cop under one roof.
Where Frisky Beaver has fun, Smoke and Gamble goes for depth: bigger, barrel-aged reds meant to be taken seriously.
Appassimento, Norfolk style
The signature move here is appassimento, the Italian technique of drying grapes before pressing to concentrate them. Smoke and Gamble dries its fruit in retired tobacco kilns, a nod to Norfolk County's farming past, then ages the wine in oak.
The flagship is a rich Cabernet blend made this way. It is all Ontario VQA fruit off the warm Lake Erie north shore, a quieter region than Niagara an hour or so east.
